Chicken and Mushrooms

Ingredients - serves 4: 
  1 ½ lb. boneless, skinless chicken breast
  8 oz mushrooms
  1 teaspoon of fresh thyme
  1 teaspoon of crush garlic

Instructions:

  1. Slice the the chick breast thinly, approximately ¼" thick, Cut chicken into 1" to 2" rectangles

  2. Clean the mushrooms, discard the stalks

  3. Slice the mushroom caps

  4. Remove thyme leaves from stems and chop finely

  5. Heat 12" sauté pan on medium high, add oil to pan

  6. Once oil is hot add half the garlic and half the thyme, sauté for 30 - 60 seconds to flavor the oil

  7. Add the chicken and sauté for 10 to 15 minutes, or until the chicken is cooked through 

  8. Once cooked, remove the chicken, set aside and keep warm

  9. Add the remaining garlic and herbs, add additional oil if the pan is dry

  10. Add the mushrooms and sauté for 10 minutes or until the mushrooms are cooked

  11. Drain off any access oil, toss the mushrooms and chicken together and serve.
