Meatballs

Ingredients (Janet’s) - for 3 people, makes 8 meatballs: 
  1.5 lb. finely chopped beef 
  1/2 cup Italian bread crumbs

Instructions:

  1. Mix beef and bread crumbs in a large bowl.

  2. Form into balls (1.5" - 2"), all the same size.

  3. Put 3 tablespoons of olive oil into the large frying pan. Smooth oil out to cover the whole pan bottom.

  4. Pre-heat the pan on Medium-High until it is hot (1-2 minutes).

  5. Put meat balls in. Brown quickly. Add more oil if you need it, 1 tablespoon at a time. 
    ("Browning" means cook quickly on each side on high heat so that the balls become brown on the outside all over. This keeps the juices in. Medium-High is the right heat setting. 1-minute per side should do it, probably.)

  6. Cover with lid. Turn heat down to the notch between med-low and medium.

  7. Cook 15 minutes, covered. Turn over mid-way if you want.

  8. If they look done on the outside, open one and see how they look on the inside. Brown is OK, some light-pink is OK, red is not.) If they need more time, give them 5 more minutes. 

  9. Take out of pan, keep warm until the pasta and sauce are ready
