Spicy Sausage with peppers

Ingredients for 4 - 6 people
8 oz thick cut bacon
1 ½ lb. hot Italian sausages
1 red bell pepper
1 green bell pepper
1 small hot pepper
½  onion
32 oz can of diced tomatoes
2 - 3 cups of chicken stock
1 tablespoon fresh oregano
1 tablespoon fresh parsley
1 cup of rice

Notes: This is a one dish meal and you will need a large, high sided frying pan with a lid. 


  1. Combine the tomatoes, chopped oregano and chopped parsley in a bowl, season with salt and pepper and set aside.
  2. Prick the sausages and place in saucepan half filled with water. Simmer for 30 minutes or until done. Remove the sausage from the saucepan and when cool enough to handle, slice into 1/2 inch thick rounds and set aside.
  3. Cut the red and green bell peppers into 1/2 - 1 inch squares, set aside.
  4. Finely chop the onion and hot pepper, set aside.
  5. Cut the bacon into 2 inch strips, sauté until crisp in the frying pan. Set aside the bacon in bowl. (Line the bowl with a paper towel to absorb any excess grease.)
  6. Sauté the bell peppers for 5 - 10 minutes in the bacon fat. Remove the peppers from the pan and set aside.
  7. Add the finely chopped onion and hot pepper to the pan, sauté until the onion is translucent.
  8. Add the rice to the frying pan and sauté for a minute or two, until the rice is coated in the bacon fat.
  9. Add 1 - 2 cups of chicken stock, cover the pan and simmer for 5 minutes.
  10. Add the bell peppers. Add more chicken stock if needed, cover and simmer for 10 minutes. (There should be enough liquid in the pan to prevent the rice from sticking to the pan.)
  11. Add the diced tomatoes, stirring in with the peppers. Cover and simmer for 10 minutes.
  12. Add the bacon and sausage, mix in, cover and simmer for 10 -15 minutes. The dish is now ready to serve.
